Roasted Fingerling Potatoes with Rosemary and Olive Oil

Ingredients:

  • 2 1/2 lbs Fingerling Potatoes, cut in half (substitute small new potatoes or creamers, if desired)
  • 3 Sprigs Fresh Rosemary, stems removed and rough chopped
  • Extra Virgin Olive Oil
  • Salt & Pepper

Instructions:

Preheat oven to 425 degrees

Toss potatoes with rosemary, salt, pepper and olive oil

Place contents in MEDIUM Grill Bag and roast for 15-25 minutes

When contents are cooked through and evenly browned, finish with more olive oil and salt. Remove from the Grill Bag and serve immediately.

Roasted Fillet of Beef

Roasted Fillet of Beef

Ingredients:

  • 2 Beef Fillets, 6-9 oz each
  • Salt & Pepper

Instructions:

Preheat grill over HIGH HEAT

Season Beef Fillets liberally with salt & pepper

Place Beef Fillets in Grill Bag. Seal grill bag by folding open end up. Place on grill in the hottest area for 4-8 minutes.

Open bag and turn fillets over. Reseal grill bag and place the fillets on the upper rack of the grill. Cook to desired temperature.

Roasted Chicken Breasts with Lemon & Garlic

Roasted Chicken Breasts with Lemon & Garlic

Ingredients:

  • Chicken Breasts (4) that have been cleaned
  • Salt & Fresh Cracked Pepper
  • 1 Lemon, cut in half
  • 2 Cloves of Garlic
  • 3 Sage Leaves, rough chopped
  • 1/3 cup Olive Oil
  • Crostini

Instructions:

Preheat oven to 375 degrees

Season Chicken Breasts liberally with salt & fresh cracked pepper place in Medium Grill Bag.

Squeeze juice of lemon into Grill Bag. Add the used half lemon as well as the garlic and sage to the chicken.

Add olive oil to bag. Seal Grill Bag by folding up open end.

Place Grill Bag in the oven and roast for 25-30 minutes.

Check contents of the bag. When the chicken breasts have reached 165 degrees internally and the garlic is soft and caramelized, the dish is finished. Remove the bag from the oven.

Allow the contents of the bag to rest for 10 minutes. This will allow for natural juices to expel creating a lite sauce.

After the bag has rested, arrange chicken breasts on a platter. Top each breast with the remaining sauce that the bag contains and serve with the Crostini.

 

BBQ Rubbed Half Chicken

BBQ Rubbed Half Chicken

Ingredients:

  • 1 Chicken, halved for roasting
  • BBQ seasoning (store bought or homemade)
  • Salt & Pepper
  • BBQ Sauce

Instructions:

One hour prior to cooking, liberally season chicken halves with BBQ seasoning, salt & pepper. Allow to rest in refrigerator to marinate in flavors.

Preheat grill to MEDIUM

Place both haves of Chicken, skin side up, in Large Grill bag. Seal bag by folding open end up.

Place sealed bag on grill and roast in bag for 30-35 minutes.

Open the bag and check is contents. Using a meat thermometer check the deepest part of the chicken's thigh to get a reading. You are looking for an internal temperature of 165 degrees. If the chicken is still under-cooked move the bag and its contents to a higher rack (if possible) or turn the heat down, for gentler cooking.

When the chicken has reached the desired temperature, allow its contents to rest in the bag 10-15 minutes. 

Top with your favorite BBQ sauce and enjoy!
